It’s just a reservation and there is no guarantee that you will get a table and only have the bottle minimum they quoted you over the phone. You have to remember there are at least 10-15 host at each venue trying to book all their tables. They always over book 5-6 groups per table because all you have done is just made a reservation and there’s no guarantee that you will show up so they over book. It usually goes to the first group who gets there and many times to the party the host feels will buy the most bottles and give the biggest tip out. When they say you had a 1 bottle minimum over the phone but when you arrive it went up to 2 or 3 bottles there’s nothing you can do because there is another group behind you willing to pay more and you will be bumped.
